WHere is a home-style take on a drink from our latest cocktail list. It's a party-sized pre-mixed that's packed with essence of the festive period, rendering it perfect for a holiday party. Save the extra cordial to use in morning drinks, puddings, or to mix another batch of this cocktail.
The Bikini Cocktail
Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
Making the Citrus Syrup: Put the listed components into a pan, bring to a gentle boil, mixing so the sugar melts. After that, remove from the stove and leave to cool completely. Pour into a sealable bottle, seal and store in the refrigerator, where it will keep for around one month.
To make Premix: Combine all the liquids into one sizeable container, let it rest for 60 minutes, then pass it through preferably using muslin, so it's fully clarified.
When ready to serve: Pour 85ml of the batch mix to a mixing glass packed with ice, gently stirring carefully for a minute to cool it down. Filter to a frosted cocktail glass or similar, top with some cranberries and finish by giving it a light spray with the mandarin essence over the top.
